Oily, stringy cheese was a big part of almost everyone's childhood. That thick layer of cheddar or mozza made every meal just a bit more comforting. But when you decide to be kinder to animals and the planet by giving up meat and dairy, grilled cheese and nachos seem a thing of the past. Not so! In recent years, a ton of vegan cheeses have begun to appear in grocery stores. Turns out soy, cashews and arrowroot can all do a pretty good job of replicating the taste.
